The setting for this restaurant overlooks the magnificent blue waters of the Great Barrier Reef, it is therefore only fitting that it includes a spectacular custom Phoenix Oven. The Whitsunday island hotel underwent a multimillion dollar renovation and the new InterContinental luxury paradise emerged. Equipped with a large custom oven with high profile panoramic door the Italian Amici restaurant is focused on creating a menu full of traditional flavours with fresh ingredients.

Resident Chef, Grant Murray, has high ambitions at Hayman "I want to achieve a quality of food across the board that consistently rivals some of the best restaurants in the world." (Catherine Keenan, Australian Gourmet Traveller, 2014). He encourages sharing dishes so everyone explores the authentic flavours he has created; not just antipasti but that day’s speciality be it braised rabbit or lobster linguine. With a wood-fired oven, Amici’s menu stars pizzas. Each is hand rolled and finished with fine ingredients: porcini, truffle, blue cheese or prosciutto, everyone will find one they love.
